This recipe is adapted from a pressure cooker Alubia bean recipe from
the blog www.dadcooksdinner.com
Despite growing up with a mother who loved her pressure cooker, a near
accident in my teens has left me a little nervous to use them. I do most of my
cooking in a vintage enameled cast iron pot I’ve been using for the past 16 years, it's not pretty but it works very well !
Ingredients:

500g white beans (Alubia are a good choice)

1 large onion

4 cloves garlic

Paprika powder /Smoked Spanish paprika powder

Sea salt ( Maldon)

Olive oil
-
Black pepper

1/2 teaspoon sugar

1 or 2 crushed dry chili

1 Chorizo
- If you are using dried
beans, soak over night and cook until halfway done.
- Leave only enough water to just cover the beans
- Slice and fry Chorizo with a little olive oil, add to beans.
- Use the oil dripping in the pan to fry the onion and garlic. When soft,
sprinkle with paprika powder fry a minute longer then add to the beans.
- Add a little salt and crushed black pepper, sugar and chili. Leave to
simmer on low heat until done.
- Serve with homemade bread or rolls.
