Rose petal cake

Here is an easy cake recipe for a rose petal cake. The first time I made it in 2013 I was not able to find, or grind almonds to make almond flour, so I just used some hacked almonds. It gave it a bit more of a nutty taste and crunch.

This cake has a nice rose flavor, and the baked petals are hardly noticeable.

It is important to use only organic (non sprayed) rose petals, and preferably from a scented rose variety.
 
The roses I used are from my garden.

Gather the rose petals and lay them out on a clean cloth in the sun, so any little bugs will make their way out.

-          3 dl chopped rose petals
-          3 eggs
-          2 dl sugar
-          1 dl oil
-          2 dl flour
-          1 dl almond flour 
-          1 ts baking power
-          1 ts vanilla sugar
-          Icing sugar for decorating.

- Beat eggs and sugar till they are nice and fluffy
- Mix the rose petals with the oil
- Add the dry ingredients to the eggs/sugar
- Add the oil with petals
- Pour in a greased and floured pan / Or paper lined 24 cm round pan
- Bake in a 175 degrees oven for about 30-40 mn. Use the toothpick test to check if the cake is finished.
- Let it cool, then sprinkle icing sugar over, and decorate with petals if you wish.
- Serve with ice-cream, or whipped cream.

  2. It looks yummy, Virginie, I guess dl means deciliter, I have never seen that in any recipe before.

    1. Here in Norway that is the way we write out recipes, it's a bit like the American cups, and spoons.

      You simply take your measurer and fill up to the required marking. Easy enough, though of course not as accurate as the way we did it in France with a kitchen scale, and all.

  3. Looks good! I love cakes that involve almonds. I've never made a recipe with rose petals.

    1. Of course, you should only use petals from your own garden, or ecological roses... you don't want to eat pesticide !

      The taste reminded me a bit of ' Turkish delights', since they use rose water in them. But the almonds gave it a crunch, without taking away from the rose flavor.
